In this study, 120 rainbow trout fish (Oncorhynchus mykiss) were prepared in six different groups and stored at refrigerator 28 days. During this time, the production of their biogenic amines (histamine, putrecine and cadaverine) were assessed. The groups were included as control, fresh rainbow trout ?llet; treatment 1, packaged with modi?ed atmosphere packaging (O2 5%, CO2 20%, N2 75%); treatment 2, dipped in Caper extracts (0.2%); treatment 3, dipped in Caper extracts (0.5%); treatment 4, dipped in Caper extract (0.2) and packaged with modi?ed atmosphere packaging; treatment 5, dipped in Caper extracts (0.5) and packaged with modi?ed atmosphere packaging. From each group, 4 samples were prepared and evaluated as triplicate at five times (0, 7, 14, 21, 28 days).
